Why can't you save the game in a multiplayer game? I know that in games like Alpha Centauri you could.

The host loads the game save (from the lobby) - instead of starting a new game, you load and old one. Then everyone joins and "checks/clicks" their ready box next to their names/civs and you're off.____________________________

You go all the way to the host screen. In the second drop down box from the top in the left panel you see "Standard", you chose "Load game" instead.
It's the same box you can choose Tournament in if you want to be certain that it plays with the default rules. As well as where you chose a scenario if you'd like to play that.
