About trade routes.

Hi all. I'm quite confident with ToT, yet I can't answer this question: how are the demand/offer goods established for each city? I thought they were chosen at random, but sometimes they change. I noticed this when I click on the resource map in the city screen (to change the squares to work, for example). Moreover: sometimes the AI breaks my routes with an AI city, even if that city still requires those goods!
