The ONLY good game is one that isn't winnable very often by even the best players. It gives me a target to aim for.
I would argue the exact opposite - it gives me a target to avoid, because it means I'll have to put work and time into my entertainment, which is not something I like.
If you feel bad about playing at the lowest levels, put some effort into learning the game instead of being a lazy sod.
I would argue that the bolded things are things that, conceptually, are rather low on the list of things I want in a entertainment product. (This is not a hard and fast rule, of course).

I get the impression that you're using the same basic approach in BtS that you used in Vanilla, which is a mistake. Treat the expansion like a whole new game and try out different strategies. The two are quite different from each other and you can't necessarily play the XP the same way as the original game. You probably just need to find a new way of looking at things.
How I began to win BTS on Prince (with cards that were dealt randomly):
1- Don't build early workers. Steal them, one or two! Pretty safe strategy since I find the AI win rarely try to invade you that early on for just stealing one of their workers. Build settlers and keep up militarily instead.
2- Build lots of cats and sacrifice them when the AI inevitably will declare war on you. Fight on your own territory. Let them come to you with their stacks, bombard with cats and decimate them militarily. Then go on the counter offensive.
In order for 2 to work, clear forests and jungle on the tiles directly next to the city in the direction from where the attack is likely to come. That way your enemies can't get the defense bonus when they are standing outside your cities and you are meant to attack them.

spies are useful and i like the realism it adds, but i rarely bother with espionage. you can leave your spy slider at 0% for the whole game and still win without a problem, this is what i typically do.

Well, there are plenty of games for your type out there. Try your hand at Hellgate:London. Even my 4 year old can win. This is assuming you don't mind the work of pressing the mouse button.
I tend to put my ESP slider at 10% when I can 1st afford to and leave it there. It gives me enough ESP points to do what I need and the passive info on the other civs. After that I don' thave to worry about it.

If I'm not doing a spy thing, I just build courthouses, jails, and security offices everywhere. That's plenty of EP for passive defense plus doing the occasional civil revolt for a quick city attack.

I do pretty much the same thing. I find setting my Espionage spending at 10% and just leaving it puts me well ahead of the other civs in points. Occasionally I'll come across a civ that has a higher ratio than me but then it's just a question of adjusting the emphasis for that civ and I'm back on top after awhile. It's really not difficult to do better at espionage than the other civs.

Of course there's plenty of games for my type out there. That's the core benefit of being a mainstream gamer - the only games that survive and thrive in this industry are games for my type

Good move in not automating your workers.
As far as spies, there are numerous threads about how to maximize them, even running an early spy specialist economy to steal technology.
