Game victory choices

I have been unable to find where you set your victory conditions in Civ IV. Probably I am just being thick ... but is it possible?

you have to play as a custom game. If you hit play now- you can't customize your victory conditions. playing as a custom game allows you to customize many features including victory types.

All victory conditions are enabled in the standard version. You can use the custom game option to disable them.
