    What does "Anti-Aliasing Multisamples" mean and do, in the options menu?

    I don't know the exact mechanism of anti-aliasing, but it basically means that the graphics card will go over the image a certain number of times making things look smoother and nicer.

    So if you have a good, powerful graphics card, it'll make CIV look better and you might want to use a greater number. If you don't, raising the amount of anti-aliasing will make any single frame look nice, but it'll mean you'll get a clunky 10 frames per second and you should avoid it.
