I use the zoom in and out all the time and I love being able to do that with my rollerball mouse.

I also zoom in and out a lot, it depends on what I need. If I need to plan a route for a missionary, zoom out; if I want to check how cool are those buggy aqueducts, zoom in.
At the very least, it should save the map prefences.
I always do the following upon loading a session:
1. Turn on Resources. (I occanisonly flip them back off when they are in the way, but normally keep them on)
2. Turn on grid lines.
3. Zoom out to max non-global view mode.

I understand that playing with resources on and grid lines enforces the strategic nature of the game, but I just find the map very ugly with those things superimposed to it.
I zoom out all the way to the 2nd level before it hits the 'globe' view. I have the grid on as well.

It is a little ugly, so I toggle them with CTRL+R, T, Y depending on what I'm doing.
Zoomed all the way out to hide those piggish 3D graphics.

I like to zoom out one step from the default after my fourth city or so, but almost all the music disappears then. Is there any way to mod the tracks played on different zoom levels?
The closest two zoom levels have nice civ-unique music (or so it seems), and I'd like to get them to play even when I'm looking at my whole empire circa 500 BC.
