I like to build all useful wonders in my capital using beaurocracy, and have the national epic and oxford in it.
When I don't have any useful wonders to build, I'd rather build missionaries than waste time on things like Stonehedge and Chichen Itzca. Yeah the prophet points are nice, but beating up annoying civs like Isabella is more fun
I rarely bother to try for the Pyramids unless I started on top of stone or am at least Ind. Concentrating on the slingshot and subsequent great library is more my style...
By the time I have enough towns and cities to switch out of beaurocracy, one of my other cities will have the ironworks to take over the late-game wonders like the internet, entertainment stuff, and the large spaceship parts (screenshot)
