Is there a help screen where you can see at a glance how many resources your civ has (like how many horses, how many spices, etc.).
Also when negotiating, what appears on your side is surplus, or all you have? I ask because I'm quite certain I have 3 horses, but during a negotiation it said Horse(1).
I almost never trade because I'm not sure if I will be giving away my only source of something. This was impossible in Civ 3 but in this game I'm quite paranoid about that and I wish there were an easier way to tell.

Any city screen will show how many resources are connected to it.

On the negotiating table you see everything you own and everything the opponent is willing to trade. I don't think the AI has the ability to trade resources it only has one of, but you do... So if you aren't using your only source of copper, trade it for big profits! To be sure, trade only items you have (2) or more of.

If you only see 1 horse on the negotiating table, only one horse resource is connected to the capital.
