why I can't bombard enemy units using my catapult artilery etc.?

You can only bombard cities using the the target icon. You cannot bombard units. You can attack a stack of units with a bombardment unit. You directly attack one unit and get collateral damage on the other units in the stack. The attack is done just like any other unit-to-unit attack. If there are any decent defenders in the stack, you will possibly lose your bombardment unit in the process. If the stack you are attacking is big enough, it can be well worth the "suicide" attack in overall points.
