Is it possible to have the game do all the updates at once?

I'm finding it very distracting (and possibly related to crashes) that the game is constantly Doing Other Things while I move my movable units.

Is there anything I can do to make the game handle all the cities, and all the other players, so I can have all that be done and then go ahead and take my turn?

CTRL+A to force your units to do the automatic tasks first.

Dunno about enemy units.
