You can find good use of your horse archers as pillaging horde.
Every time you pillage an improvement you get small amount of gold. Most money you can make by razing to the ground those cottages which AI loves to build everywhere. If the cottage is grown to a village for example you can pillage it 3 times: Once you raze it down to a hamlet, second time down to a cottage and finally to the ground. You get money everytime you hit "pillage" button from a single tile.
A good horde of horse archers running and pillaging deep into the enemy territory could make you a fortune and pay for the expensive war. Just make sure to upgrade Flanking of your horse archers to increase the chance of retreating and surviving attacks of the enemy spearmen.
Don't waste your horsemen against the cities. Them leave for the swordsmen and catapults.
