I am currently engrossed in this game but I took a breather to get some ideas from the pros. How can I use the tiles and the buttons for halting or encouraging something in the city manager window if a city is unhappy or sick? Also, where can I find a good military guide that will tell me a good race, religion and civic to try for a purely war based game? Thanks very much!

Not a pro, but....
As regards the game, all religions are created equal: there aren't any specific effects for following Christianity particularly rather than Hinduism. That is, the following advice can apply for any religion, depending on the circumstances of the game. Religion can be useful for keeping on the good sides of people, if you're willing to plan ahead - convert to the religion of a civ you want to keep happy, and that'll help relations. Under Theocracy, your new units get experience bonuses if built in cities which have your state religion, so if you're careful, you can keep an enemy happy and get experience bonuses from the same religion.
Theocracy, as mentioned, is good for wartime. Police State increases production for units and reduces war weariness, though that's pretty late-game. Careful use of Emancipation can hurt your enemies a little by giving them an unhappiness penalty in their cities if they aren't using it too (which can lead to revolts, which paralyzes production for several turns). Nationhood lets you draft several units per turn if you need to make a sudden counter-attack and gives happiness bonuses in cities with a barracks, helping to counteract war weariness. If you have a large spread-out empire, State Property will remove distance-based upkeep penalties, though Free Market's extra trade route may be more profitable.
As for which civ to use, any leader with the "aggressive" trait is going to be useful, as all melee and gunpowder units get a free Combat I promotion (+10% strength), and barracks and drydocks are produced twice as quickly. Creative is one I like, since all of your cities produce 2 culture a turn simply by virtue of having the trait. This will help you hold onto your new acquisitions by reducing the chances of post-war culture flip, which can be further mitigated by the production bonus for theaters and colloseums. The only leader who combines those traits is Kublai Khan, but the Mongolian Keshik, which replaces the horse archer, can make early wars a heck of a lot easier.
