btw, on that screenshot you can take a small hint of the background of the main menus. it's a view of earth from orbit. it's not clear on the screen but you also have clouds spinning over the globe. you have to see it "live" to truely appreciate it
Every civ only having one city sounds cool, but I bet one city challenge limits the player to one city while the AI can build as many cities as it wants.

Culture flipping means the city that revolts due to low culture vs. surrounding enemy's high culture will eventually "flip" to the high culture (i.e. change an owner).
As for conquest city flipping, I think this means a newly conquered city will have a chance to flip back to its previous order for several turns following its conquest, if not garrisoned.
