Considering all the MegaCorporations (El Squid, Iberian Delight, Spamish Enterprises...) that are popping up, I suggest some stuff for the different ages:
Ancient--Like Arnelos said, you don't have companies, you only have family interests. I suppose you could have factories, however, as the assembly line did exist in the ancient times I think they ahve found that out...
As an example, Spamish Enterprises could turn into just La Ropa, just a thread for getting custom clothes, no preset mass-production ones.
Midieval--with the Late Anceint introduction of Marketplaces (Currency) we can move our family interests to booths at the Marketplace that try to push our wares onto the citizens. Other than this, we still have family interests, although, of course, the Church or the State or the Church-State can step in if we really want to accurately RP this.
Industrial--IIRC the first joint-stock corporations were in the late Middle Ages, so assuming we get j-s corps with Banking or Economics then we can start making those Mega-Corps, or at least the founding base for them.
But Industrial is also an age of small business, factories, and eventually ultra-big business (Standard Oil, anyone?). The gov't will have to regulate the businesses in the late Industrial to prevent Standard Oil from buying Spain's government. 
Modern--Competition, and lots of it. Toward the end, some ultra-big corporations again. (And monopolies too, also monopolies are good for the Industrial age!!!)
