I finally got around to asking a greek person how it's pronounced, and apparently it is pronounced Ah-POL-yi-toh. The l is slightly like a spanish ll but not quite as much towards the y sound... The n, apparently, is silent. Surprises all around.

You needn't of asked someone how to pronounce the site name, Hugo. I created a streaming audio file of it some time ago (admittedly not very well publicized in the About section -- will be corrected by this evening):
<A HREF="http://download.gamestats.com/civilization/realaudio/about/Apolyton.rm">Click here</A> (47 seconds) to listen (<A HREF="http://www.real.com/player" TARGET="new">RealPlayer</A> required to listen).
