The way I brew beer is pretty damn low tech but a lot of the knowledge I use is pretty damn modern. For example the only real example of tech that I really rely on is a thermometer but it'd be pretty damn annoying without a pretty modern technique (brew in a bag) that was only developed a few years ago but only really calls for a bag that is water permeable but isn't going to let the grain out in hot water. Same with other techniques reading an old 1965 home brewing guide, the advice is just horrific but I'd be able to brew just fine with supplies available at that time.

Same with D&D, that only requires some dice, scratch paper, pencils and a book but the knowledge behind it is only a few decades old.

Took me a minute or two, then I realized you were talking about Dungeons and Dragons. Never played myself. As far as brewing Beer, I have never tried it. I can enjoy a good cold beer in the summer with family or friends, but mostly, drink wine nowadays. It doesn't seem to give me that little pouf in the midsection that I notice on my family. As your permeable bag, is that like cheese cloth? Do you create your mix of ingredients and experiment or follow a given recipe? I am hopeless in writing down things, never seem to get it the same the second time!

Since some of my hobbies involve programming and hacking, they would be impossible (nor even exist) without today's technologies. Other hobbies like playing music or music composition don't require much in the way of modern technology at all.

I brew beer, but not from scratch, from tins of syrup. It's more because I'm a cheapskate. I service and repair my vehicles myself for the same reason.

Motorcycling. Cross country skiing. Trekking. Domesticity - gardening, cooking, home repairs/maintenance, the odd minor construction project. Parenthood.

Ruminating. That's what I come here for.

Ruminating, I love that response! It can definitely keep one entertained. Nothing wrong with being thrifty, either! That is a hobby in itself. How cheap can I do something?!

I play piano and sing. I can also play the flute and bassoon, but nearly as well as I play the piano.

Fishing, hikimg, camping, brewing beer, and reading. I also like playing the odd video game or watching a movie but those require modern technology.

I have a piano and guitar. I really can't play good, just make stuff up, but the grandkids love it. I made a flute out of bamboo, and I am one who just toots out tunes that meets my moods. My daughters on the other hand, are awesome and semi professional violin and cello players. The oldest plays piano exceptionally. Her concertos bring tears to my eyes!

Edit add: I do have plans to make my own harp. Future project.

I think you will do just fine without technology. I did envision a die hard video gamer using card box and cans with string for his make believe vid game or creating hand puppets and trying to recreate his favorite shows/movies! Haha.
