I know that in both the US and Sweden, that milk and eggs can be used (and taste fine) long after the use by date (which is generally a few days after the best by date).

The thing with milk (and everything else, really) is that it's somewhat random as to when it goes bad. You'll have a bell curve, with the expiration date placed such that a very large percentage gets bad after that date. Odds are, most of the products will get bad after that date. The good thing with milk is that, once it goes bad, all of it goes bad, so you can smell it to be sure.
Similarly with eggs. You should always be cracking them in a bowl rather than directly into what you're making. That way, if one of them is bad, it won't ruin what you're making.
Cheese is great. It gets tastier, and moldier, but you can always cut the mold off.
I use to regularly eat moldy bread, and then someone told me it was dangerous (I think on here).
I now try not to do so...

No, ketchup is tomato sauce. You use sauces as a condiment.
In the U.S., at least, ketchup and tomato sauce mean two different things. Tomato sauce is what you put on spaghetti, or pizza (not that you put the same stuff on both).
Same here. Ketchup should be thicker than sauce (but not as thick as paste).
