  • Hot sauce

What's your favorite kind of hot sauce? I didn't attach a poll b/c no matter how many I included, I'd wind up leaving off whatever brand is most popular in San Diego, and then I'd never hear the end of it.

Personally, I like sriracha, but there's something to be said for cholula too. It depends what kind of mood I'm in. Cholula's not as hot, but it adds a pleasant flavor to balance out the heat.

I use Tobasco as a condiment and Dave's Insanity Sauce for cooking (e.g. add a teaspoonful to spaghetti sauce)

Dave's is the hottest that I've ever eaten.

In the past DaBomb ...nowadays partially Feuersalamander (probably not known outside of germany) and partially I just use dried and ground Bhut jolokia (some of it from my own Bhut jolokia culture 3 years ago [actually tried to do another one this year, but had no luck with the seed])

I have no experience with any of those except Tabasco; I was right not to put up a poll. "Fire salamander" is a pretty boss name for a hot sauce, I have to say.

I'm not sure if it really matters...

Do you mean it doesn't matter to you personally, in that anything spicy will do? Or that it's a trivial question for everyone? Or are you expressing existential angst: "It matters not which hot sauce we choose today, for in the end, all of us shall die"?

I don't really think the flavor of hot sauce is important but maybe I just haven't tried any hot sauce with a flavor I like

                  Cholula is good.

I really like the rapidly-becoming-passe Rooster Sauce.
No, I did not steal that from somebody on Something Awful.

Well, one thing that matters a lot with hot sauces is the Scoville value
Some sauces may be too hot for those who aren´t used to eat really hot ... some may even be too hot for people who are experienced with eating hot (especially indian food (if prepared the traditional indian way and not watered down for europeans or americans) falls into this category) and some sauces may even be soft for people who rarely eat spicy.

Therefore I´d say the taste/brand of a sauce matters a lot and it is no surprise that my favorite Chilli shop as several pages just with hot sauces

These days I pretty much use screaming chicken (sriracha) as my default option unless I am in a Mexican restaurant. Tapatio has a nice mild flavor and Cholula is even more mild (almost too mild). They all have vinegar but Tobasco uses too much for my tastes.

I've never understood the value of making your food insanely spicy.
